How to make the best black and white croissants
Beside traveling my other passion is cooking. I can't say I'm an expert in kitchen but I really love to cook and try out new recipes. I will be honest and say this is my first attempt to make these two color croissants, they look great and what is the most important they taste amazing! I have 2 small kids and they ask from me to bake and cook all kind of food. The original receipt is in Serbian from "Minjina Kuhinjica". I translated this one in English, original recipe is on her website.
500g flour
250ml vegetable oil
250ml milk
2 eggs
40g fresh yeast
White dough
6 spoons of flour
Black dough
3 spoons of flour
3 spoons of cocoa
Syrup
500g sugar ( I reduced sugar to 500g, in original recipe is 800g )
500ml water
1. Preparation for syrup:
In a pot put the water and sugar to boil for approximate 5 mins. Let it cool while preparing the dough.
2. Preparation for two color dough:
In larger bowl dissolve the yeast in the warm milk. No need to wait for yeast to rise, you can immediately put eggs, vegetable oil then add flour and knead the dough well. Divide the dough into two equal parts. Put 3 tablespoon of cocoa powder and 3 tablespoons of flour in one part. In white part put 6 tablespoon of flour. Divide black dough and form 2 more balls, do the same with white dough, so you have 4 balls in total.
Stretch the balls with the roller and form equal circles. I know mine aren't perfect here, I usually cut a perfect circle with pizza roller but this time I forgot to do that before I took photos. I cut the edges before I rolled the dough into small croissants. Put white dough on black one (or black on white) and divide in 16 parts (portions) or more if you want.
Roll the parts and form small croissants, put them on baking sheet and align the portions on baking paper. Bake in the preheat oven at 200 ºC for about 18-20 mins. Once the croissant are ready pour syrup on them and let them absorb everything well. Put them on serving tray and enjoy.
