How to make soft mini croissants with cheese - Easy and quick

These mini croissants are a perfect appetizer for a homemade brunch or a last minute dinner. They’re really very easy to make. As usual my kids were involved in the process every step of the way. Seeing how happy they were helping me, going around and saying I helped mommy to make them and I put sesame over it makes my heart melt. Mini croissants are perfect for kids birthdays, I noticed kids gladly eat them and my kids always ask for more. If you love croissants, you must definitely check recipe for  black and white croissants , they are a bit different and very tasty.

Ingredients:


150 ml milk
30 g yeast (I used the fresh one, also instant yeast will work)
1 tea spoon sugar
1/2 tea spoon of salt
50 ml vegetable oil
180 g sour cream 20% mm
2 eggs
630 g flour
melted butter
sesame

Tip: After trying various cheeses I found out that cream cheese is the best for this. Of course you can try other but this one stays inside, it won`t melt.

Steps:

1. Measure out 1 tea spoon of sugar, 1/2 tea spoon of salt , 1 tea spoon of flour and place all in a small bowl with 30 g crushed yeast. Mix it with 150 ml warm milk. You want the yeast to activate which will take a few minutes. For me it`s from 5-7. 


Tip: I put mine on radiator, where is warm, which sometimes takes less minutes and it rise fast. 


2. In a medium bowl combine the salt, 1 yolk, 2 whites, vegetable oil, 630 g flour and add yeast. Cover with plastic wrap and allow it to rise for half an hour.

3. Once the balls have risen, divide the dough into 4 part, roll out each parts into a ball, sprinkle a bit of flour on your work surface. Roll the ball of dough into a flat, thin circle. Using a sharp knife or pizza cutter, cut the circle into sections, so that you have around 15-16 triangles formed.

4. Place a teaspoon of cream cheese closer to the large end of the triangle, beginning at the widest point of the triangle where the filling start rolling, towards the narrowest point, so that it resembles a croissant shape. You will need to shape the edges a bit by creasing the sides together and tucking them in. Do this with each ball of dough until all the croissants have been formed.

5. In a small mixing bowl, scramble 1 egg yolk. Prepare baking sheets, and place croissants on a baking sheet. Using a brush, gently brush the tops with the egg wash. Top each croissant with sesame seeds. 

Tip: You don’t like sesame seeds? You can use poppy seeds, flax seeds, dried herb, like rosemary or thyme. You can even sprinkle them in a few different ways so your guests can select their favorite flavor.

6. Preheat oven to 220 °C and bake the croissants for 15-16 minutes, until golden brown. When your mini cheese croissants are golden brown, remove from the oven and allow them to cool at least 15-20 mins.
